Paella adventures

You all know I love to cook, I picked up a new paelo cookbook last week and decided the paella recipe sounded great. So here it is, I used chicken sausage instead of pork and supplemented with a whole gang of Thai chilies to spice it up. I loved it and it was the first time I’ve used saffron.

Don’t tell my son who hates cauliflower but there’s a whole head in this dish, ha, he had no clue. I just pulsed it as the recipe called for. Flavor was unbelievable. I can post the recipe if anyone is interested. This over 50 eating plan may be fun after all since my metabolism has decided it doesn’t want to work anymore.

Mushroom meat balls yes

The meal tonight for our pescatarian expedition was mushroom meatballs. Let me just say yes, these are great. You would never know unless I told you that there is zero meat. Recipe below:

  1. 2 containers button mushrooms
  2. Diced onion 1
  3. Rosemary and basil (as much as you like)
  4. Diced pepper (any color)
  5. Garlic
  6. 1 cup quick oats
  7. 1 cup bread crumbs
  8. 2 eggs
  9. Parmesan cheese
  • I threw the first 4 ingredients in a food processor and pulsed it, threw it into a skillet with some olive oil and sautéed with garlic until the liquid evaporated. This is important.
  • Now simply mix with the last 5 ingredients roll into balls and bake at 400 until golden brown. Spray the baking dish so they don’t stick
  • Then I opened a jarred marinara and added some fresh tomatoes, cheese peppers n heated it up, add the cooked meatballs to the sauce and you have dinner
  • I love carrots so I poured some half and half in a pot with fresh rosemary and some butter reduced and they were delicious

    In the search for continual learning I read a lot of books. My most recent read is Tuesday’s with Morrie and I cried like a baby. What a beautiful story and the life lessons are invaluable. 

    If we equate these lessons to today’s events whether you agree or not with the kneeling during the national anthem, kolin kaepernick is living the “just because society says so doesn’t make it right” example. I’m sad to see that people don’t understand it’s not the action but the demonstration that all people matter and are connected. 

    Blogging


    I am researching the whole “make a profit from your blog” concept and in my quest for information I read a book that suggested my grammar needed to be perfect. I do not agree with this and let me tell you why.
    • I want people to follow my blog because of my fun personality and great information and a lot of that has to do with my slang and off the wall perspective and humor. None of which obey good grammar rules
    • I spent 4 years of my life in college getting my bachelor’s degree and had to write using correct syntax, why would I torture myself for the rest of my life doing the same.
    • I have two college graduate children and for the past 9 years I have been the editor and chief of every one of their papers, I’m tired.
    My hope is that when you read my blog you can’t help but smile at least once.

    Death and Not Understanding

    This week a fantastic woman that we have known since our kids were little passed away from brain cancer. Tonya began her fight with breast cancer and won only to have it come back in her brain. She was one of the loveliest, kindest, funniest people that I have ever met. I can only imagine the pain that her husband and son are feeling and it makes me wonder why great people get such horrible diseases and are taken from the world. I believe in a god and know that there must be a reason but can’t help but ask why her? Tragedy is all around us, which is one of the reasons I don’t watch the news or read the paper because I don’t want to see or hear all the negative input. It is when these situations occur that I guess is an opportunity for all of us to evaluate what is truly important and focus on making the world a better place. Thank you Tonya for making the world a better place- in honor of my girl……

    Bitten when trying to help

    My homeless tale begins with my son becoming acquainted with a couple who lived across the street from his house. They were renting one side of a duplex from the husbands mother and she lived in the other side. One day he was talking to them and the wife told him her mom, stepdad and brother and sister were moving in with them because they were homeless. Well it wasn’t a few weeks and the mother evicted everyone from the duplex including her son.
    My son being the tender heart he is was like mom they have 2 teenagers and they are going to be living in the park can they just stay in my garage for a month until they get into a shelter? My husband was like hell no that is a huge liability and me being the softy said ok. The mom (we will call her Beth) the stepdad and two kids move into my sons garage.
    The daughter and son find a new apartment to live in. So at this point I am thinking now why don’t they go live with them now? The mom hangs out on the patio all day not even looking for housing. I arrive one day to visit my son and Beth is making tbone steaks on the grill for breakfast, huh what? I can’t afford steak really…
    My son asks and Beth tells him they get 600 in foodstamps, which my son calls and finds out they have put his address as their residence at which time he informs the dept they do not and that they have one week to vacate.

    My son and I have a conversation and he gives them a deadline to move out (after 2 months) of no action on their part and no desire to do anything different. They on the day he tells them they have to be out move to a hotel and leave all kinds of crap in his garage thinking this is free storage or a trash dump. My son calls them, yes they have cell phones and tells them you have one week to get your crap out (still very nicely) of the garage with no response, so he donates the usable items to the Goodwill.
    * Lesson learned you cannot help those who don’t want to help themselves.
    * There are homeless people by choice
    * This particular family now posts on every social networking site they can asking for free food and money.
    * Be sure to consider who you try to help and from this point forward we will stick with volunteering…..

    I know that this post might make some people mad, oh well be mad because I know for certain that if this was my family, my butt would be out everyday doing anything and everything I could do to get out of someone’s garage and I certainly would respect their kindness enough to leave it better than it was before I arrived..
